About this Coffee

El Paseo has been in the family for over 20 years, but third-generation grower Huver Castillo only recently swapped his life as a maths teacher for the farm, joining his dad to grow coffee full-time. Sitting pretty at 1800 metres, the farm looks out over the Buesaco valley, shaded by native trees and packed with Caturra cherries ripe for the picking.


And boy, do those cherries get the royal treatment: a 36-hour pre-ferment, a sea salt cleanse, and a six-day anaerobic fermentation and added enzymes to dial up the floral notes, before being gently dried and rested for 15 days.


In your mug, expect notes of jasmine, honeydew, and bergamot up front, with a beautiful hibiscus finish, especially as the coffee starts to cool. Roasted for filter, Rocket Flower is fruity, sweet, and downright delicious.

The Golden Ratio
