Every great cafe is more than just good coffee — it’s shaped by the people who bring it to life, day in and day out. With the launch of the Coffee Supreme x La Marzocco Workwear Collection, we’re celebrating those who make it happen.

This series takes us behind the machine, into cafes and workshops, to hear from the people putting the new workwear to the test in their daily grind. Next up, we chat with Stacey, co-owner of Migrant Coffee in West Footscray. Built from the ground up with intention and community at its core, Migrant Coffee is a woman-of-colour-led business that has become a staple in Melbourne’s west. Stacey shares what makes their space unique, why partnerships matter, and why a good accountant is worth every dollar. 

Q. Can you introduce yourself and tell us about Migrant Coffee?
A. I'm Stacey, one of the owners of Migrant Coffee in West Footscray. We’ve been here for five and a half years, and we’re a woman-of-colour-owned and operated business.

Q. What has it been like working with Coffee Supreme and La Marzocco?
A. Working with Coffee Supreme and La Marzocco has been seamless. We’ve been with both since we opened in 2019. The team at Supreme is great — easy to work with, and they also provide a technician who’s always on call if we ever run into trouble. The feedback from our team on La Marzocco’s machines has always been solid, which makes everything run smoothly.

Q. Why do partnerships like this matter in the coffee industry?
A. It’s great to collaborate with people you know and trust — especially when they share the same values. Community is one of our biggest priorities, and working with brands that support and engage with their communities makes a real difference.

Q. What sets Migrant Coffee apart?
A. Our team. We’re a woman-of-colour-led business, and that’s always been a priority for us. My business partner, Melody, and I built everything in the shop ourselves, literally. Every detail was put in place with intention, from how we designed the space to the people who make up our team and share our values. When people walk in, we want them to feel at home. We’ve built a space that’s welcoming, inclusive, and reflective of the community we’re part of.

Q. First impressions — what do you like about the new Coffee Supreme x La Marzocco Workwear?
A. It’s incredibly comfortable and easy to move in. That’s a big deal when you’re running around all day, lifting things, making coffee, and working between inside and outside spaces. The oversized fit makes a difference too — it doesn’t feel restrictive, which is key when you’re on your feet all day.

Q. How does what you wear impact your work?
A. We take a lot of pride in what we wear, and that carries through to our work. What we wear is an extension of how we express ourselves, and we encourage our team to do the same. Comfort and function matter, but so does personality.

Q. What’s your best advice for someone opening a cafe?
A. Spend the money on a good accountant. Seriously. We tried to cut costs at the start and ended up paying for it in the long run. If we had invested in the right accountant from day one, everything would have been properly aligned, and we wouldn’t have had to fix so many issues later.

Q. Any final thoughts?
A. Always do everything with intention. Whether it’s how you build your business, the team you create, or the partnerships you choose, having a clear purpose behind what you do makes all the difference.
